Saffron is a spice derived from the flower of Crocus sativus, commonly known as the “saffron crocus”. The vivid crimson stigma and styles, called threads, are collected and dried for use mainly as a seasoning and colouring agent in food.
Saffron has been linked to other health benefits that have not yet been extensively studied:
- May reduce heart disease risk factors.
- May lower blood sugar levels.
- May improve eyesight in adults with age-related macular degeneration (AMD).
- May improve memory in adults with Alzheimer’s disease.
So, what makes saffron so pricey? To put it plainly, it’s an incredibly labor-intensive crop to harvest. Each saffron flower only produces three threads, so it can take thousands of flowers to get just one ounce of saffron.
